HEALTHY CHICKEN SALAD

Everyone has been asking for this recipe!! I made a batch of it on Sunday and it has been my lunch this week!! So delicious and less than 150 calories per serving! With the sweet potatoe it adds an additional 150 calories!

1 large grilled chicken breast
1/2 med apple
2 celery stalks
1 cucumber
3/4 cup of grapes (can cut the big ones in 1/2)
1/2 cup chopped natural walnuts
4 egg whites chopped

Combine all ingredients in bowl (I like my celery and cucumber chopped super fine)
 Dressing: Juice of 1 lime
               Fresh ground pepper
               1 single serving container of non-fat plain yogurt
               2 TBLspoons non-fat miracle whip
Pour dressing over salad and mix well.  Can store in fridge for a week or more. I serve this over a bed of fresh spinach (about 2 cups). I will also eat 1/2 a small sweet potatoe with cinnamon as well. A great lunch or pre-workout meal!

Reflecting

   I was reminded this morning about how fragile our lives are, and how quickly it can be taken away from us. I know we all want to make ourselves better and we may not be satisfied with what our current fitness or health situation is. We can ALWAYS make it better, but sometimes it's good to remember how truly blessed we are. When you look in the mirror and want to hate on how your legs look, there is a soldier who has lost both of his legs and is learning how to live without them.  Or, when you don't want to get out of bed for your early morning workout think about how blessed you are that you can get up and go outside to enjoy God's creation.
   We get so caught up in changing things and trying to improve, occasionally it's healthy to reflect that though there are things we  want to change or things we don't like about ourselves, we are amazing creations and we are building ourselves into the best that We can be!!! A Great New Year Start

Thank you for checking out my blog. I'm looking forward to sharing with all of you great fitness tips, great food ideas, and menu's to help you reach your goals and change your life.

So, here it is a new year, and time for a NEW YOU!  I know you've been putting up excuses every year and waiting til later to make a change for the better.. Now is the time and I know you can do it.  You are worth it and all it takes are some simple changes. I will be adding recipes, websites, workouts, and ideas to help you reach your goals!  As you are working on mapping out your goals, here are some things to remember:
   1. WRITE THEM DOWN! - you are 85% more likely to reach a goal that has been written down.
   2. Make Them Manageable-  Don't say you want to lose 40 pounds by April, break it up into smaller,
       easier, to reach goals, such as: I will lose 1-2 pounds per week.
   3. Schedule Time- Put it on your calendar. You will need at least 1 hour/6 days a week, so put those
       appointments to workout on your schedule and stick to it!
   4. Get a Buddy- You are 80% more likely to keep a workout appointment if you have someone depending
        on you to be there. Whether it's a friend, a personal trainer, a spouse, commit to it with them.
   5. Celebrate your Victories!!!- When you hit your manageable goals, celebrate.... Not with food, but with
       a pedicure/manicure, a new workout outfit, going to the movies w/spouse! Fun stuff!
